Brock's Healthy Pancakes
My brother, Brock, is famous in our family for his healthy (but yummy!) pancakes. Our family loves breakfast foods, and I thought that I'd share this recipe.
1 cup flour (preferably wheat flour, or half wheat, half white)
1 teaspoon baking powder
half teaspoon salt
1 tablespoon sugar
1 cup milk
1 egg, lightly beaten
quarter cup plain Greek yogurt

quarter cup plain Greek yogurt
*We like to double this recipe!*
- In mixing bowl, combine baking powder, flour, salt and sugar.
- In a different bowl add milk, egg, and Greek yogurt. Next add flour mixture and stir until blended. It is okay for small bumps to remain in batter. Your batter should be a little thick, but pourable. (Add additional milk if needed.)
- Preheat grittle to medium high and grease with oil.
- With your lattle pour quarter cup batter onto your hot grittle for each pancake.
- Flip pancakes when bubbles form and edges are set. Do not flatten pancake while cooking.
- Cook until golden brown
